Whole Strawberry Preserves

  • 6 cups prepared firm, tart strawberries
  • 4-1/2 cups granulated sugar

    Wash and drain large, firm, tart strawberries; remove caps.

  2. 02

    Layer prepared berries and sugar alternately in a nonreactive container.

  3. 03

    Cover and refrigerate 8 to 10 hours or overnight.

  4. 04

    Pre-sterilize canning jars and keep them hot. Prepare lids according to the manufacturer’s directions.

  5. 05

    Heat fruit and sugar to boiling, stirring gently. Boil rapidly for 15 to 20 minutes, stirring as needed, until the syrup is somewhat thick or reaches 9°F above the local boiling point of water.

  6. 06

    Remove from heat and skim foam. Fill hot jars, leaving 1/4 inch headspace.

  7. 07

    Use the tested boiling-water process: 5 minutes (base time).
