Old-Fashioned Apricot Jam

Gather

Ingredients

  • 2 quarts crushed, peeled apricots
  • 1/4 cup lemon juice
  • 6 cups granulated sugar

Instructions

    Pre-sterilize canning jars and keep them hot.

  2. 02

    Combine apricots, lemon juice, and sugar in a large preserving pot.

    Bring slowly to a boil, stirring occasionally until the sugar dissolves.

  4. 04

    Keep the mixture at a rapid boil until it thickens, about 25 minutes. Stir more often as it nears the proper consistency.

    Take the pan off the heat. Ladle the jam into hot jars, allowing 1/4 inch of headspace. Clean each rim, then secure a lid and band.

  6. 06

    Use the tested boiling-water process: 5 minutes (base time).
