Tart Plum Jam

Gather

Ingredients

  • 2 quarts chopped tart plums (about 4 lb)
  • 6 cups sugar
  • 1½ cups water
  • ¼ cup bottled lemon juice

Instructions

    Pre-sterilize half-pint jars and keep them hot.

  2. 02

    Wash, pit, and finely chop the plums.

  3. 03

    Combine plums and water; cover and simmer 5 minutes.

  4. 04

    Add sugar and lemon juice. Boil rapidly, stirring often, until the mixture reaches the jellying point.

  5. 05

    Spoon the hot jam into sterile jars that have been kept hot, allowing ¼-inch headspace; clean the rims and secure the lids.

  6. 06

    In a boiling-water canner, process for 5 minutes (base time).
