Sweet Cherry Topping
A research-tested sweet cherry topping recipe from the National Center for Home Food Preservation.
Gather
Ingredients
- 5 cups pitted, halved Bing cherries (about 2.5 pounds as purchased)
- ¼ cup water
- 2 cups sugar
- 1 pouch liquid pectin (3 fl. oz.)

Wash half-pint or pint jars, keep them hot, and prepare the lids.

Wash, stem, pit, and halve the Bing cherries. Measure 5 cups into a pot and add 1/4 cup water.

Stir over medium-high heat and simmer 8 to 10 minutes, until soft enough to mash. Mash the cherries, then mix in 2 cups sugar.

Stir over high heat to a boil that remains vigorous during stirring and boil 1 minute. Take the pot off the heat, then blend in the entire 3-ounce liquid-pectin pouch.

Remove foam, fill hot jars with 1/2-inch headspace, and apply the lids.

For half-pints or pints at 0–1,000 feet, the boiling-water process requires 15 minutes; extend it according to the elevation schedule.
