Strawberry-Kiwi Ginger Jam

Gather

Ingredients

  • 3 cups crushed strawberries
  • 3 kiwis, peeled and diced
  • 1 tbsp bottled lemon juice
  • 1 tbsp minced crystallized ginger
  • 1 box (1.75 oz) regular powdered pectin
  • 5 cups sugar

Instructions

    Wash jars and keep them hot; prepare lids.

  2. 02

    Place the strawberries, kiwi, lemon juice, ginger, and pectin together in a large pot. Over high heat, bring the mixture quickly to a boil while stirring often.

    Add sugar and stir until dissolved. Return to a full rolling boil and boil hard 1 minute, stirring constantly.

  4. 04

    Take the pot off the burner and skim away the foam. Ladle the jam into hot jars, allowing ¼-inch headspace; clean the rims and attach the lids.

  5. 05

    In a boiling-water canner, process half-pints or pints for 10 minutes (base time).
