Spiced Tomato Jam

Gather

Ingredients

  • 3 cups prepared tomatoes (about 2-1/4 pounds tomatoes)
  • 1-1/2 teaspoons grated lemon rind
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 cup lemon juice
  • 4-1/2 cups granulated sugar
  • 1 box powdered pectin

Instructions

    Choose firm, ripe tomatoes and wash them. Scald the tomatoes, slip off the skins, and chop them.

    Heat tomatoes slowly to a simmer, stirring constantly. Cover and simmer 10 minutes, stirring occasionally.

    Transfer exactly 3 cups of the cooked tomatoes to a large saucepan. Stir in the lemon rind, allspice, cinnamon, and cloves.

    Sterilize the canning jars before filling them. Mix the lemon juice into the tomatoes, then measure the sugar and set it aside.

    Mix the powdered pectin into the tomatoes. Set the pan over high heat and stir continuously until the mixture boils.

    Add sugar all at once. Return to a full rolling boil and boil hard for 1 minute, stirring constantly.

  7. 07

    Take the pan off the heat and remove the foam. Ladle the hot jam into jars, allowing 1/4 inch of headspace.

    Use the tested boiling-water process: 5 minutes (base time).
