Spiced Orange Jelly

Gather

Ingredients

  • 2 cups orange juice (about 5 medium oranges)
  • 1/3 cup lemon juice (about 2 medium lemons)
  • 2/3 cup water
  • 1 package powdered pectin
  • 2 tablespoons orange peel, finely chopped
  • 1 teaspoon whole allspice
  • ½ teaspoon whole cloves
  • 4 sticks cinnamon, 2 inches long
  • 3½ cups sugar

Instructions

    Presterilize half-pint or pint jars, hold them hot, and prepare the lids.

  2. 02

    Tie the orange peel, allspice, cloves, and cinnamon loosely inside a clean spice bag.

  3. 03

    Pour both juices and the measured water into a roomy saucepan. Stir in powdered pectin, add the spice bag, and heat rapidly while stirring.

  4. 04

    Once the boil stays vigorous during stirring, add 3 1/2 cups sugar. Return to that boil and boil 1 minute; discard the spice bag and skim foam.

    Fill the hot jars with 1/4-inch headspace and apply the lids.

  6. 06

    Boiling-water process half-pints or pints for 5 minutes at 0–1,000 feet, then add time when the canning elevation requires it.
