Spiced Blueberry-Peach Jam

Gather

Ingredients

  • 4 cups chopped or ground peeled peaches
  • 4 cups blueberries
  • 2 tablespoons lemon juice
  • 1/2 cup water
  • 5-1/2 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 cinnamon stick
  • 1/2 teaspoon whole cloves
  • 1/4 teaspoon whole allspice

Instructions

    Pre-sterilize canning jars and keep them hot. Tie cinnamon, cloves, and allspice in cheesecloth.

    Wash, peel, pit, and chop or grind peaches. Wash blueberries and remove stems.

  3. 03

    Cover the pot and heat the measured fruit, lemon juice, and water to boiling. Lower the heat and cook for 10 minutes, stirring now and then.

    Add sugar, salt, and the spice bag. Boil rapidly, stirring constantly, until the jam reaches 9°F above the local boiling point of water or thickens.

  5. 05

    Remove from heat, discard the spice bag, and skim foam.

  6. 06

    Ladle the hot jam into hot jars and leave 1/4 inch of headspace. Clean the rims, then put on the lids and bands.

  7. 07

    Use the tested boiling-water process: 5 minutes (base time).
