Gather

Ingredients

  • 12 ounces concentrated orange juice, thawed
  • 2½ cups water
  • 4½ cups sugar
  • 1 box powdered pectin

Preserve

Instructions

  1. 01

Presterilize half-pint or pint jars, keep them hot, and prepare the lids. Measure all 4 1/2 cups sugar before cooking.

  2. 02

Combine the thawed 12-ounce orange-juice concentrate with 2 1/2 cups water, then whisk in the powdered pectin.

  3. 03

Stir over high heat until boiling strongly. Add the measured sugar immediately, return to a boil that remains vigorous while stirred, and boil 1 minute.

  4. 04

Remove foam, fill hot jars with 1/4-inch headspace, and apply the lids.

  5. 05

Use a boiling-water canner and process half-pints or pints for 5 minutes at 0–1,000 feet. Increase processing time for elevation.
