Gather

Ingredients

  • 2 cups cranberry juice (about 1 pound cranberries and 2 cups water)
  • 2 cups quince juice (about 2 pounds quince and 4 cups water)
  • 1 cup apple juice (about ¾ pound apples and ¾ cup water)
  • 7½ cups sugar
  • 1 pouch liquid pectin

    Presterilize half-pint or pint jars, keep them hot, and prepare the lids.

    For cranberry juice, cover 1 pound ripe cranberries with 2 cups water, boil, simmer 20 minutes, and strain. Measure 2 cups juice.

    For quince juice, leave 2 pounds washed quince unpeeled and uncored, remove both ends, cut finely, add 4 cups water, simmer 25 minutes, and strain. Measure 2 cups.

    For apple juice, leave 3/4 pound washed apples unpeeled and uncored, remove both ends, cut small, add 3/4 cup water, simmer 20 minutes, and strain. Measure 1 cup.

    Combine the measured juices with 7 1/2 cups sugar. Bring to a vigorous boil while stirring, add the liquid pectin, return to that boil, and boil 1 minute; skim foam.

  6. 06

    Ladle into hot half-pint or pint jars, retain 1/4-inch headspace, and close them. Boiling-water process for 5 minutes at 0–1,000 feet, using more time at higher elevations.
