Ingredients

  • 1-1/2 cups firmly packed fresh mint leaves and stems
  • 2-1/4 cups water
  • 3-1/2 cups granulated sugar
  • 2 tablespoons lemon juice
  • 1 pouch (3 oz) liquid pectin
  • A few drops green food coloring (optional)

Instructions

    Pre-sterilize canning jars and keep them hot.

    Rinse the mint and crush or finely chop its leaves and stems. Add the water and heat rapidly until boiling.

  3. 03

    Take the pan off the heat, cover it, and steep for 10 minutes. Strain out and discard the mint, then measure exactly 1-3/4 cups of the liquid.

    Combine measured juice, sugar, and lemon juice in a large saucepan. Bring to a full rolling boil over high heat, stirring constantly.

    Add liquid pectin. Return to a full rolling boil and boil hard for 1 minute, stirring constantly.

  6. 06

    Remove from heat and skim foam. Fill hot jars, leaving 1/4 inch headspace. Wipe rims and apply lids and bands.

  7. 07

    In a boiling-water canner, process hot half-pint or pint jars for 5 minutes (base time).
