Gather

Ingredients

  • 2 quarts chopped fresh figs (about 5 lb)
  • ¾ cup water
  • 6 cups sugar
  • ¼ cup bottled lemon juice

Instructions

    Pour boiling water over figs and let stand 10 minutes. Drain, stem, and chop. Pre-sterilize jars.

    Add water and sugar to figs. Bring slowly to a boil, stirring occasionally until sugar dissolves.

  3. 03

    Boil briskly until thick, stirring often so the jam does not stick. Mix in the lemon juice and continue cooking for 1 more minute.

  4. 04

    Fill hot sterile jars, leaving ¼-inch headspace; wipe rims and apply lids.

  5. 05

    In a boiling-water canner, process half-pints or pints for 5 minutes (base time).
