Damson Plum Jam

Gather

Ingredients

  • 5 cups coarsely chopped Damson plums (about 2 lb)
  • 3 cups sugar
  • ¾ cup water

Instructions

    Pre-sterilize jars and keep them hot.

  2. 02

    Put the plums, sugar, and water together in the pan. Heat gradually, stirring from time to time, until boiling and the sugar is fully dissolved.

    Boil briskly to, or just short of, the jellying point, defined here as 8°F above water's local boiling temperature. Stir more often as the mixture thickens.

  4. 04

    Take the pan off the heat. Transfer the jam to heated sterile jars with ¼-inch headspace, clean each rim, and secure the lids.

  5. 05

    In a boiling-water canner, process half-pints or pints for 5 minutes (base time).
