Cranberry Conserve

Gather

Ingredients

  • 1 unpeeled, finely chopped orange
  • 2 cups water
  • 3 cups sugar
  • 1 quart cranberries, washed
  • ½ cup seedless raisins
  • ½ cup chopped nuts

Instructions

    Wash half-pint jars, keep them hot, and prepare the lids.

  2. 02

    Boil the finely chopped unpeeled orange with 2 cups water until the peel softens, about 20 minutes.

    Mix in the cranberries, 3 cups sugar, and raisins. Bring up to boiling as the sugar dissolves, then cook rapidly toward 220 degrees F, about 8 minutes.

    Stir more often as the conserve thickens. Add the nuts for the final 5 minutes of cooking.

    Fill hot half-pint jars with 1/4-inch headspace and apply the lids. At 0–1,000 feet, process for 10 minutes in a boiling-water canner; increase the time for elevation.
