Gather

Ingredients

  • 4 cups grape juice (about 3½ pounds Concord grapes and ½ cup water)
  • 7 cups sugar
  • ½ bottle liquid pectin

Instructions

    Presterilize half-pint or pint jars, keep them hot, and prepare the lids.

  2. 02

    Wash, stem, and crush 3 1/2 pounds ripe Concord grapes. Add 1/2 cup water, cover, boil, then simmer 10 minutes.

    Strain the cooked grapes and measure 4 cups juice. Stir in all 7 cups sugar.

    Bring to a vigorous boil while stirring, add 1/2 bottle liquid pectin, return to that boil, and boil 1 minute. Remove foam.

  5. 05

    Transfer the jelly to hot half-pint or pint jars, leaving 1/4-inch headspace, and lid them. At 0–1,000 feet, the boiling-water process is 5 minutes; lengthen it for elevation.
