Concord Grape Jam

Gather

Ingredients

  • 2 quarts stemmed Concord grapes
  • 6 cups sugar
  • About ½ cup water, as needed for cooking skins

Instructions

    Pre-sterilize half-pint jars and keep them hot.

  2. 02

    Wash grapes and separate skins from pulp. Simmer skins with about ½ cup water until tender, 15–20 minutes.

  3. 03

    Soften the grape pulp by cooking it without added water, then push it through a sieve to remove the seeds.

  4. 04

    Combine pulp, skins, and sugar. Boil rapidly, stirring constantly, until the mixture thickens, about 10 minutes.

  5. 05

    Ladle the hot jam into sterile jars that have been kept hot, allowing ¼-inch headspace; clean the rims and secure the lids.

  6. 06

    In a boiling-water canner, process for 5 minutes (base time).
