Classic Strawberry Jam

Gather

Ingredients

  • 5-1/2 cups crushed strawberries (about 3 quart boxes)
  • 1 package powdered pectin
  • 8 cups granulated sugar

    Pre-sterilize canning jars and keep them hot. Prepare lids according to the manufacturer’s directions.

    Choose fully ripe strawberries, rinse them, and discard the stems and caps. Crush the prepared fruit.

  3. 03

    Measure exactly 5-1/2 cups crushed strawberries into a preserving pot. Add powdered pectin and stir well.

  4. 04

    Bring quickly to a full boil over high heat, stirring constantly.

  5. 05

    Stir in the sugar, return the mixture to a vigorous boil, and keep it boiling for 1 minute while stirring continuously.

    Take the pan off the heat and skim away the foam.

  7. 07

    Fill hot jars immediately, leaving 1/4 inch headspace. Wipe rims and apply lids and bands.

  8. 08

    Process in a boiling-water canner for 5 minutes (base time).

    Let the jars cool undisturbed, then check every seal.
