Classic Peach Jam

Ingredients

  • 3-3/4 cups crushed peaches (about 3 pounds)
  • 1/4 cup lemon juice
  • 1 package powdered pectin
  • 5 cups granulated sugar

    Pre-sterilize canning jars and keep them hot. Prepare lids according to the manufacturer’s directions.

    Wash, peel, pit, and crush fully ripe peaches.

  3. 03

    Measure crushed peaches into a preserving pot. Add lemon juice and powdered pectin; stir well.

  4. 04

    Bring quickly to a full boil over high heat, stirring constantly.

  5. 05

    Stir in the sugar and bring the mixture back to a vigorous boil. Keep it boiling for 1 minute while stirring without pause.

  6. 06

    Take the pan off the heat, skim away the foam, and fill the hot jars with 1/4 inch headspace.

  7. 07

    Use the tested boiling-water process: 5 minutes (base time).
