Blueberry-Spice Jam

Gather

Ingredients

  • 2-1/2 pints ripe blueberries
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground nutmeg or cinnamon
  • 5-1/2 cups granulated sugar
  • 3/4 cup water
  • 1 box (1-3/4 oz) powdered pectin

Instructions

    Pre-sterilize canning jars and keep them hot.

  2. 02

    Rinse the blueberries, then crush them thoroughly in the saucepan, working one layer at a time.

    Add lemon juice, chosen spice, and water. Stir in powdered pectin.

  4. 04

    Over high heat, stir often until the mixture reaches a full rolling boil.

  5. 05

    Pour in the sugar and heat again to a full rolling boil. Keep it boiling hard for 1 minute while stirring continuously.

    Remove from heat and quickly skim foam. Fill hot jars, leaving 1/4 inch headspace.

  7. 07

    Use the tested boiling-water process: 5 minutes (base time).
