Apricot-Orange Conserve

Gather

Ingredients

  • 3½ cups chopped drained apricots (about 2 20-oz. cans of unpeeled apricots or 1 pound dried apricots)
  • 1½ cups orange juice (3 or 4 medium-size oranges)
  • Peel of ½ orange, shredded very fine
  • 2 tablespoons lemon juice
  • 3¼ cups sugar
  • ½ cup chopped nuts

    Presterilize half-pint or pint jars, keep them hot, and prepare the lids.

  2. 02

    To prepare dried fruit, place 1 pound apricots with 3 cups water in an uncovered pan. Cook about 20 minutes until tender, then drain and chop. Simply drain and chop canned apricots.

    Combine 3 1/2 cups prepared apricots, orange juice, orange peel, lemon juice, and 3 1/4 cups sugar. Reserve the nuts.

    Stir constantly while cooking until thick or 9 degrees F above the local boiling point. Mix in the nuts, remove the pot from heat, and skim foam.

    Fill hot half-pint or pint jars with 1/4-inch headspace and fasten the lids. At 0–1,000 feet, the boiling-water process lasts 5 minutes; adjust upward for elevation.
