Apple Marmalade

Gather

Ingredients

  • 8 cups thinly sliced tart apples (about 3 lb)
  • 1 orange
  • 1½ cups water
  • 5 cups sugar
  • 2 tbsp bottled lemon juice

    Pre-sterilize half-pint jars and keep them hot. Prepare lids according to the manufacturer’s directions.

    Wash, peel, quarter, and core the apples; slice thinly. Quarter the orange, discard seeds, and slice it very thinly.

  3. 03

    Heat the water and sugar in a wide preserving pot until the sugar dissolves.

  4. 04

    Add lemon juice, apples, and orange. Boil rapidly, stirring constantly, until the mixture reaches 9°F above the local boiling point of water or thickens.

  5. 05

    Take the pan off the heat and remove the foam. Spoon the marmalade into hot, sterile jars, allowing ¼-inch headspace; clean the rims and attach the lids.

  6. 06

    In a boiling-water canner, process half-pints for 5 minutes (base time).
