Cranberry Sauce

  • 4 cups cranberries
  • 1 cup water
  • 2 cups sugar

    Rinse 4 cups cranberries, combine them with 1 cup water, and cook until the berries are soft.

    Choose the finished texture: push the softened fruit through a fine sieve, mash it for a crushed sauce, or leave the berries whole. For less foam, 1/2 teaspoon butter may be stirred in before adding sugar.

    Stir in 2 cups sugar, return the sauce to a boil, and boil for 3 minutes.

    Ladle the boiling sauce into hot half-pint or pint jars. Maintain 1/2-inch headspace, remove trapped air, clean the rims, and apply lids.

  5. 05

    At 0-1,000 ft, process half-pints or pints for 15 minutes in a boiling-water canner. Increase the time.
