Ingredients

  • 17½ lb ripe pears per 7 quarts
  • Water, apple juice, white grape juice, or USDA syrup

Instructions

  1. 01

    Peel, halve, core, and hold pears in ascorbic-acid solution. Drain.

  2. 02

    Boil pears in chosen liquid 5 minutes; pack hot with ½-inch headspace.

  3. 03

    In a boiling-water canner, process pints 20 minutes or quarts 25 minutes.
