Ingredients

  • Firm, ripe papaya
  • Medium or heavy canning syrup
  • 1/4 cup lemon juice per quart of prepared syrup

    Prepare medium or heavy canning syrup, adding 1/4 cup lemon juice for every quart of syrup.

    Wash firm, ripe papaya; peel it, remove the seeds, and cut the flesh into cubes. Place the cubes in the prepared syrup and simmer gently for 2-3 minutes.

    Transfer the hot fruit to hot pint or quart jars and cover it with boiling syrup. Preserve 1/2-inch headspace, remove bubbles, wipe the rims, and secure the lids.

  4. 04

    At 0-1,000 ft, process hot-packed papaya for 15 minutes in pints or 20 minutes in quarts using a boiling-water canner. Increase the time.
