  • 19 lb firm juicy apples per 7 quarts
  • Water or very light, light, or medium canning syrup

Instructions

  1. 01

    Wash firm, juicy apples; peel, core, and slice them. An ascorbic-acid holding solution may be used to limit browning.

  2. 02

    For each 5 lb of drained slices, add 1 pint of water or prepared very light, light, or medium syrup. Boil for 5 minutes, stirring often enough to prevent scorching.

    Place the hot slices and liquid in hot pint or quart jars. Leave 1/2-inch headspace, release air bubbles, wipe the rims, and apply the lids.

  4. 04

    At 0-1,000 ft, process pints or quarts for 20 minutes in a boiling-water canner. Increase the time.
