Sweet Apple Relish

Gather

Ingredients

  • 4 pounds apples, peeled, cored and sliced thin
  • 1¼ cups distilled white vinegar (5%)
  • 1 cup sugar
  • ½ cup light corn syrup
  • 2/3 cup water
  • 1½ teaspoons whole cloves
  • 4 pieces stick cinnamon (1½ inches each)
  • 1 teaspoon whole allspice

    Keep pint jars hot and prepare the lids. Peel, core, and thinly slice the washed apples.

    To limit browning, hold the slices in 1/2 teaspoon ascorbic acid dissolved in 2 quarts water.

  3. 03

    Bring the 5% vinegar, sugar, corn syrup, 2/3 cup water, cloves, cinnamon, and allspice to a boil.

    Drain the apples, add them to the syrup, and simmer 3 minutes with occasional stirring.

  5. 05

    Take out the cinnamon sticks, putting one into each jar. Add the hot apple slices, cover them with boiling syrup, and leave 1/2-inch headspace in each pint.

  6. 06

    At 0–1,000 feet, the boiling-water process for pints lasts 10 minutes. Follow the longer time listed above 1,000 feet.
