Ingredients
- 2½–3 lb yellow banana peppers
- 5 cups cider vinegar (5%)
- 1¼ cups water
- 5 tsp canning salt
- 2 tbsp celery seed
- 4 tbsp mustard seed

Instructions

Wear gloves. Wash, stem, and slice peppers into ¼-inch rings.

Boil vinegar, water, and salt. Put celery and mustard seeds in jars; pack rings and cover with brine, leaving ½-inch headspace.

In a boiling-water canner, process pints 10 minutes.
