Pickled Sweet Green Tomatoes

Gather

Ingredients

  • 10–11 lb green tomatoes
  • 2 cups sliced onions
  • ¼ cup canning salt
  • 3 cups brown sugar
  • 4 cups vinegar (5%)
  • 1 tbsp mustard seed
  • 1 tbsp allspice
  • 1 tbsp celery seed
  • 1 tbsp whole cloves

    Wash and slice the green tomatoes and onions. Sprinkle them with 1/4 cup canning salt, let them stand for 4 to 6 hours, and drain well.

    Warm the brown sugar in the 5% vinegar, stirring until dissolved. Put the cloves, celery seed, allspice, and mustard seed into a tied spice bag, then add it with the tomatoes and onions. Add only enough water to cover the pieces if needed.

    Bring the mixture to a boil and simmer for 30 minutes, stirring often enough to prevent scorching. When the tomatoes are tender and translucent, remove the spice bag.

    Fill hot pint jars with tomatoes and hot pickling liquid, leaving 1/2-inch headspace. Remove bubbles, correct the headspace, clean the rims, and apply the lids.

  5. 05

    At 0-1,000 ft, process pints for 10 minutes in a boiling-water canner. Increase the time.
