Pickled Dilled Okra

Gather

Ingredients

  • 7 lbs small okra pods
  • 6 small hot peppers
  • 4 tsp dill seed
  • 8 to 9 garlic cloves
  • 2/3 cup canning or pickling salt
  • 6 cups water
  • 6 cups vinegar (5 percent)

Instructions

    Wash and trim the okra. Pack whole pods firmly into hot pint jars with ½-inch headspace, placing one peeled garlic clove in each jar.

    Combine the canning salt, hot peppers, dill seed, water, and 5% vinegar in a large saucepan and bring the brine to a boil.

  3. 03

    Pour the boiling brine over the okra while keeping ½-inch headspace. Remove air, recheck the level, wipe the rims, and fasten the lids.

  4. 04

    Boiling-water process pints for 10 minutes at 0-1,000 ft. Use the elevation tool to add the required time above 1,000 ft.
