Gather

Ingredients

  • 6 cups chopped green tomatoes
  • 1-1/2 cups chopped sweet red peppers
  • 1-1/2 cups chopped green peppers
  • 2-1/4 cups chopped onions
  • 7-1/2 cups chopped cabbage
  • 1/2 cup canning or pickling salt
  • 3 tbsp whole mixed pickling spice
  • 4-1/2 cups vinegar (5 percent)
  • 3 cups brown sugar

    Presterilize half-pint or pint jars, keep them hot, and prepare the lids.

    Wash and chop the tomatoes, peppers, onions, and cabbage, then toss them with 1/2 cup canning salt. Pour hot water over everything and leave it for 12 hours.

    Drain the vegetables, then press them in a clean cloth to remove as much liquid as possible.

    Tie the pickling spice in a loose spice bag. Combine it with 4 1/2 cups 5% vinegar and 3 cups brown sugar, then bring the liquid to a boil.

    Add the drained vegetables and boil gently for 30 minutes, or until the batch is reduced by half. Discard the spice bag.

    Pack the hot relish into half-pint or pint jars with 1/2-inch headspace. At 0–1,000 feet, the boiling-water process takes 5 minutes; add time for elevation.
