Gather

Ingredients

  • 8 cups chopped fresh peaches ( about 12 large)
  • 8 cups chopped ripe tomatoes (about 12)
  • 2 cups diced green sweet peppers (2 large)
  • 1 tablespoon red hot pepper, ground (1 pepper)
  • 2 cups ground onions (about 6)
  • 4 cups light brown sugar (firmly packed)
  • 2 cups cider vinegar (5%)
  • 1½ teaspoons canning or pickling salt
  • 4 tablespoons pickling spice, tied in cheesecloth bag

Instructions

    Wash pint jars, keep them hot, and prepare the lids.

    Peel, pit, and chop the peaches. Peel the tomatoes and cut them into 1/2-inch pieces.

    Stem and seed the green peppers, then dice them to 1/4 inch. Grind the onion and red hot pepper.

  4. 04

    Tie the pickling spice in cheesecloth. Combine it with all measured produce, brown sugar, 5% cider vinegar, and canning salt in a 10-quart pot.

    Cook while stirring for 1 1/2 to 2 hours, stopping when the relish reaches the thickness you prefer. Remove the spice bag.

    Fill hot pint jars with 1/2-inch headspace, release bubbles, and apply the lids.

  7. 07

    Process the pint jars for 10 minutes at 0–1,000 feet in a boiling-water canner, adding the required time for elevation.
