No-Sugar-Added Sweet Cucumber Slices

Gather

Ingredients

  • 3½ pounds of pickling cucumbers
  • boiling water to cover sliced cucumbers
  • 4 cups cider vinegar (5%)
  • 3 cups Splenda®
  • 1 tablespoon canning salt
  • 1 cup water
  • 1 tablespoon mustard seed
  • 1 tablespoon whole allspice
  • 1 tablespoon celery seed
  • 4 one-inch cinnamon sticks

    Wash the cucumbers, remove 1/16 inch from each blossom end, and cut the cucumbers into ¼-inch slices. Cover the slices with boiling water for 5 to 10 minutes.

    Drain away the hot water. Cool the slices with continuously running cold water or frequent changes of cold water, then drain thoroughly.

    Bring the 5% cider vinegar, 1 cup water, Splenda®, salt, mustard seed, allspice, and celery seed to a boil. Carefully add the cucumbers and return the mixture to boiling.

    If desired, place one cinnamon stick in each hot pint jar. Pack in the hot slices, add boiling brine, and retain ½-inch headspace. Remove air, correct the fill, wipe the rims, and add lids.

  5. 05

    Boiling-water process pints for 10 minutes at 0-1,000 ft. Use the elevation tool to add time above 1,000 ft.
