Green Mango Salsa

Gather

Ingredients

  • 6 cups diced unripe mango (about 3 to 4 large, hard green mangoes)
  • 1½ cups diced red bell pepper
  • ½ cup finely chopped yellow onion
  • ½ teaspoon crushed red pepper flakes
  • 2 teaspoons finely chopped garlic
  • 2 teaspoons finely chopped ginger
  • 1 cup light brown sugar
  • 1¼ cups cider vinegar (5%)
  • ½ cup water

    Raw green mango can irritate skin, so wear gloves and avoid touching your face. Wash the produce. Cut the bell pepper into ½-inch dice and finely chop the onion; peel the mango and cut it into ½-inch cubes.

    Place every measured ingredient in a large pot. Over high heat, stir until the sugar dissolves and the mixture reaches a boil; then lower the heat and simmer for 5 minutes.

    Pack hot solids into hot half-pint jars and cover with the hot liquid. Retain ½-inch headspace, release air, correct the level, clean the rims, and apply lids.

    Boiling-water process half-pints for 10 minutes at 0-1,000 ft. Use the elevation tool to add the required time above 1,000 ft.
