Gather

Ingredients

  • 4 lbs fresh tender green or yellow beans (5 to 6 inches long)
  • 8 to 16 heads fresh dill
  • 8 cloves garlic (optional)
  • 1/2 cup canning or pickling salt
  • 4 cups white vinegar (5 percent)
  • 4 cups water
  • 1 tsp hot red pepper flakes (optional)

    In a boiling-water canner, because the base process is 5 minutes, sterilize the pint jars before filling and keep them hot. Wash and trim the beans to 4-inch lengths.

    Put 1 or 2 dill heads and, if desired, one garlic clove in each jar. Stand the beans upright and trim as needed to maintain ½-inch headspace.

    Heat the water, 5% white vinegar, salt, and optional pepper flakes together until bubbling.

    Pour the hot liquid over the beans, retaining ½-inch headspace. Release air, reset the level, clean the rims, and fasten the lids.

  5. 05

    Boiling-water process pints for 5 minutes at 0-1,000 ft. Use the elevation tool to add time above 1,000 ft.
