Classic Pickle Relish

Gather

Ingredients

  • 3 qts chopped cucumbers
  • 3 cups each of chopped sweet green and red peppers
  • 1 cup chopped onions
  • 3/4 cup canning or pickling salt
  • 4 cups ice
  • 8 cups water
  • 2 cups sugar
  • 4 tsp each of mustard seed, turmeric, whole allspice, and whole cloves
  • 6 cups white vinegar (5 percent)

Instructions

    Wash half-pint or pint jars, keep them hot, and prepare the lids.

    Combine the chopped cucumbers, both peppers, onion, salt, and ice with 8 cups water. Let the vegetables soak for 4 hours.

    Drain, cover with fresh ice water, wait 1 more hour, and drain again.

  4. 04

    Tie the mustard seed, turmeric, allspice, and cloves in a spice bag. Add the bag to the sugar and 5% vinegar, then boil the liquid.

    Pour the hot pickling liquid over the vegetables. Cover and refrigerate the mixture for 24 hours.

  6. 06

    Bring the entire batch to a boil, remove the spice bag, and fill hot half-pint or pint jars with 1/2-inch headspace.

  7. 07

    At 0–1,000 feet, process for 10 minutes in a boiling-water canner. Increase the time.
