Ingredients

  • 5 lbs tomatoes (as purchased)
  • 2 lbs chile peppers (as purchased)
  • 1 lb onions (as purchased)
  • 1 cup vinegar (5 percent)
  • 3 tsp salt
  • 1/2 tsp pepper

    Wear gloves for the chiles. Slit them, then blister in a hot oven, under a broiler, or over a protected range burner until the skins loosen. Cover briefly with a damp cloth, cool, peel, seed, and chop.

    Dip the tomatoes in boiling water for 30 to 60 seconds, chill them, and remove the skins and cores. Coarsely chop the tomatoes and prepare the onions.

    Transfer the measured tomatoes, chiles, onions, 5% vinegar, salt, and pepper to a large saucepan. Heat until bubbling, then simmer for 10 minutes.

    Fill hot pint jars with the hot salsa. Retain ½-inch headspace, release air, clean the rims, and apply lids.

    Boiling-water process pints for 15 minutes at 0-1,000 ft. Use the elevation tool to add the required time above 1,000 ft.
